How To Handle Killer Brownie® Bulk Slabs

A 3-step guide that will have you merchandising slabs like a pro.

Receiving Your Order  

When you receive your Killer Brownies®, the product is frozen and pre-cut. The cases in your order will have two to four individual slabs. The flavor and the number of slabs per case will be marked on the outer case label, along with any special handling instructions. Check the outside of the case for any additional notes on your order.   

Handling Your Foodservice Slabs  

Step 1: Thawing the Slabs  

The first step in working with our brownies is to thaw the slab. Our signature brownies have a center layer of caramel that is delicious for consumers but presents a challenge to cut through while the brownies are frozen. For a smoother process, place the slabs in a cooler to thaw overnight or let them sit at room temperature for two to four hours. Afterward, the brownies will be softer and much easier to work with.  

Step 2: Separating the Brownies   

Foodservice slabs are wrapped in plastic to maintain maximum freshness. Use a bench knife to remove the plastic and separate the brownies from the tray. You'll want to slide the knife between the baking tray and the brownies to loosen any caramel sticking to the edges. Though the product is pre-cut, we recommend going over the cut lines with your bench knife to further separate the brownies from one another and create smooth and attractive edges.  

If you don’t plan to use the whole slab at once, good news! You can merchandise as much of the slab as you want and re-freeze the rest. To do that and maintain the quality of the brownies, cut a slit in the plastic alongside one of the short ends of the baking tray. Then, slide the plastic down the slab, stopping when you've reached the number of brownies you want to take out.   

 With this trick, you can decide how much or how little of the product you wish to merchandise, thus increasing your flexibility to control your inventory. Re-cover the remaining slab in plastic and wrap it tightly, then place the brownies into the freezer for up to two weeks.  

Step 3: Merchandising for Retail & Foodservice  

In retail settings, Killer Brownies® can be displayed in a refrigerated or room-temperature bakery case. Though they will look beautiful in either setting, a refrigerated case will allow you to create a larger stack, as the product will hold up better in a cooler climate. Whether refrigerated or ambient, these brownies have a five- to seven-day shelf life. This window ensures that your customers receive the high-quality, bakery-fresh tasting product they've come to expect from Killer Brownie®.  

 In a bakery case, stacking the brownies results in a decadent display. We suggest stacking them two or three layers high. This will create a dramatic visual that shows off all of the layers and highlights the rich textures of the brownies. There are many ways to create a dynamic and appetizing merchandising display to entice your customers and increase bakery sales, so don't be afraid to try something new!     

Alternatively, consider packaging them in a clamshell as a grab-and-go offering in a self-service case. With this merchandising method, the clamshell adds an additional five days to the product's shelf life. It’s an excellent way to reach those consumers looking for pre-portioned and pre-packaged treats. To achieve this, use a clamshell that holds one to two Killer Brownies®. Place the brownies directly inside or use a cupcake liner to line the bottom before placing the brownies on top.
